This pristine environment contributes to the special attributes of the coffee, enhancing its quality and flavour profile.

the Venetian Voyage coffee undergoes the washed process, a meticulous method that highlights the pure, intrinsic flavors of the beans. Here’s how it works:

  1. Harvesting: Coffee cherries are handpicked at peak ripeness by skilled farmers who have honed their craft through generations

  2. Pulping: The harvested cherries are taken to a wet mill, where the outer fruit layer (pulp) is removed using a pulping machine. This step ensures that only the beans and their mucilage remain

  3. Fermentation: The beans are then placed in fermentation tanks filled with water, where they undergo a natural fermentation process. This stage typically lasts 12-48 hours, depending on the climate and altitude. The fermentation helps break down the mucilage attached to the beans

  4. Washing: After fermentation, the beans are thoroughly washed with clean water to remove any remaining mucilage. This washing process is crucial as it cleans the beans, allowing their true flavours to shine through

  5. Drying: The washed beans are then spread out to dry on raised beds or patios under the sun. They are regularly turned to ensure even drying and to prevent mold or over-fermentation. This drying process can take several days

  6. Milling and Sorting: Once the beans reach the desired moisture content, they are hulled to remove the parchment layer, sorted for quality, and then packaged for export
